Made a dosa. Almost game changing. I did make it successfully but is there a way to use cast iron and no oil and no stick? (insert The Knaack vocal – my conundrum). I have eaten these many times and watched how-to-videos but didn’t think it this easy. Just red lentils, water and whatever flavour you add. I chose cumin considering cumin is my best new friend in the kitchen. Made more videos for upcoming classes. Best to stay ahead of the students, there will be no sympathy if the teacher falls behind. There will be complaints. One time, a few years ago, I had to cancel a class because of childcare issue. I told my class and students complained about the reason. The person in charge called me and advised me next time say you’re sick instead of telling the truth. It is less complicated in terms of protocol dealing with student complaints. Doesn’t that sum up everything? You fight the good fight in terms of various issues yet when push comes to shove the advice is better to lie, keep your head down make it easier for the rest of us. It is a difficult position when people announce they re lazy and prefer it that way. It means you not only are challenged to do what you think right but also must accommodate the passive aggressive fallout which will be psychologically added to your burden. the dosa sticks but it doesn’t talk back.
