My mother did something amazing with eggplant and cornmeal and I failed many times trying to figure it out, until last night. Didn’t use cornmeal but it’s just as good, basically oil. Lookout Mama there’s a white boat coming up the river. Neil Young got the lookout mama part right. Avocado oil is pricey, $20 for 500ml but what it does to my Tofu steaks is worth bragging about. Higher smoke point than olive or coconut. Pradip Jamnadas, the cardiologist with a Youtube channel about his patients health and diet, rants persuasively about the evils of oils from seed, a distinction I never came upon before. He makes it sound as though we shouldn’t trust corporations, who’d have thought? The interview on Coleman Hughes channel with Noam Chomsky said the same thing and Chomsky’s so succinct. Rare indeed for 90-something year olds to show no signs of concentration theft. I saw Eubie Blake on television when he was in his 90s, playing piano tastefully. If I get up that high I hope the fingers still honour my wishes but either way, I’ll be correctly cooking kasha and eggplant for the green room.

    The day I see an eggplant in the Wadena grocery store is the day I eat my hat.
